Easy Colourful Veggie Frittata
Ingredients:
9 eggs
1 red onion, finely chopped
3 garlic cloves, minced
1 red pepper, diced
1 green pepper, diced
1 yellow pepper, diced
A handful of spinach, roughly chopped
Salt, to taste
Black pepper, to taste
Your favourite spices (try a pinch of paprika and a dash of oregano)
Instructions:
Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit).
In a large mixing bowl, combine the finely chopped red onion, minced garlic, diced red, green, and yellow peppers, and the chopped spinach.
Crack the eggs into the bowl with the veggies. Whisk everything together until the eggs and veggies are well combined.
Add a pinch of salt, black pepper, and your favorite spices to the egg and veggie mixture.
Grease a baking dish with coconut oil and pour the egg and veggie mixture into it, ensuring an even spread.
Place the baking dish in the preheated oven and bake for approximately 40 minutes or until the frittata is set and the top is golden brown.
