
Ingredients:
Wholegrain OR gluten-free spaghetti pasta, 60 g
Soya granules, 50 g
Tomato passata / canned tomatoes / fresh tomatoes, 200 g
Red bell pepper, 1/2
Onion, 1/2
Garlic, 1-2 cloves
Olives, black or green, 2 tbsp.
Coconut oil, 1 tbsp.
Herbs: dried oregano, dried basil, or any favorite herbs
(Nutritional yeast, for cheesy taste, optional, 1-2 tbsp.)
Instructions:
Pour hot water over soya granules until covered, let sit for 5-10 minutes, then drain.
Boil spaghetti according to package instructions.
Heat coconut oil in a pan, sauté onion, garlic, and bell pepper until soft.
Add drained soya, tomatoes, olives, and herbs. Simmer for 2-3 minutes.
Toss with pasta and sprinkle nutritional yeast if desired.
