
Ingredients:
Romaine lettuce, 1 to 2 handfuls
Chicken breast, 200 g
Chicken seasoning, 1 tsp.
Coconut oil, 1 tsp.
Wholegrain OR gluten-free bread, 2 slices (80-100 g)
Garlic-infused oil, 1 tbsp. OR bread spread, 2 tbsp.
(Nutritional yeast, for cheesy taste, 1-2 tbsp., optional)
Dressing:
(Anchovy filets, optional, 2)
Dijon mustard, 1/2 tsp.
Egg yolk, 1
Olive oil, 1 tbsp.
Lemon juice, 1 tbsp.
White wine vinegar, 1 tsp.
Instructions:
Sauté seasoned chicken strips in coconut oil until golden brown.
Toast bread and brush with garlic-infused oil or spread.
Blend (or whisk) anchovies, mustard, yolk, olive oil, lemon juice, and vinegar until smooth.
Arrange lettuce, top with chicken, drizzle dressing, and add garlic toast.
