Ingredients for four portions:
1 cup rolled oats
2 cups almond milk
1 apple, diced
1/4 cup chopped walnuts
1 teaspoon ground cinnamon
1-2 tablespoons maple syrup or honey (optional, for sweetness)
Additional toppings (optional): sliced almonds, sliced banana, or a drizzle of almond butter
Instructions:
In a medium-sized saucepan, combine the rolled oats and almond milk. Bring the mixture to a gentle boil over medium heat.Â
Once it starts boiling, reduce the heat to low and simmer the oats, stirring occasionally, until they reach your desired consistency. This usually takes about 5-7 minutes.
While the oats are cooking, heat a separate pan over medium heat. Add the diced apple, chopped walnuts, and ground cinnamon. Sauté until the apples are tender and the walnuts are lightly toasted, about 3-5 minutes.
Once the oats are cooked, remove the saucepan from the heat. Stir in the sautéed apples, walnuts, and cinnamon. If you like your oatmeal on the sweeter side, you can add maple syrup or honey at this point.
Give everything a good stir to combine, and then divide the oatmeal into four serving bowls.
Top each bowl with additional toppings of your choice, such as sliced almonds, sliced banana, or a drizzle of almond butter.
