Beef & Shrimp Pad Thai

Ingredients:
Rice stick noodles, 60 g (rice noodles are naturally gluten-free)
Salt-reduced soy sauce, 1 tbsp.
Lime juice, 1 tbsp.
Fish sauce, 1 tbsp.
Olive oil, 1 tbsp.
Beef fillet OR chicken breast, sliced, 100 g
Raw prawns, peeled and deveined, 6-8
Carrot, shaved into ribbons or grated, 1
Coriander, 1 handful
(Bean Sprouts), 1/2 handful
Peanuts, 1 tbsp.
Instructions:
Soak noodles in hot water until tender, then drain.
Mix soy sauce, lime juice, and fish sauce.
Stir-fry beef or chicken in oil for 3-5 minutes. Add prawns and chilies; cook 3 minutes.
Add carrots, and sauce mix; stir-fry 2 minutes.
Toss with bean sprouts and coriander. Serve with peanuts and lime.
