
Ingredients:
White fish (cod, seabass), 200 g
Wholegrain rice, 60 g (rice is naturally gluten-free)
Brussels sprouts, 200 g
Medium tomato, 1
Red onion, 1/2
Walnuts, 2-3 tbsp.
Olive oil, 1 tbsp.
Lemon juice, 1 tsp
Fresh or dried parsley, 2-3 tbsp.
Sea salt
Freshly ground black pepper
Instructions:
Cook rice according to the instructions. Steam or bake fish seasoned with black pepper.
Wash the Brussels sprouts, remove outer leaves, cut in half, and cook until tender. Blanch the tomato, peel, and cut into chunks. Peel and dice the onion. Mix everything with chopped parsley and halved walnuts. Drizzle with lemon juice and olive oil, season with salt and pepper. Mix with brussels sprouts well before serving.
