Creamy Sweet Potato Soup with Tahini
Ingredients:
Sweet potato, 400 g
Chicken broth, 800 ml
Onion, 1
Garlic, 2 cloves
Ghee butter, 1 tbsp.
Tahini, 2 heaped tbsp.
Salt, to taste
Black pepper, to taste
Sweet pepper, 1 tsp.

Instructions:
In a large pot, melt ghee butter over medium heat.
Add chopped onion and minced garlic. Sauté until softened.
Add sweet potato cubes to the pot, stirring for a couple of minutes.
Pour in the chicken broth and bring the mixture to a boil. Reduce heat and let it simmer for 20 minutes or until sweet potatoes are tender.
Use an immersion blender to puree the soup until smooth.
Stir in tahini, salt, black pepper, and sweet pepper. Adjust seasoning to taste.
