Creamy Sweet Potato Soup with Tahini
Creamy Sweet Potato Soup with Tahini

Ingredients:

  • Sweet potato, 400 g

  • Vegetable broth, 800 ml

  • Onion, 1

  • Garlic, 2 cloves

  • Coconut oil, 1 tbsp.

  • Tahini, 2 heaped tbsp.

  • Salt, to taste

  • Black pepper, to taste

  • Sweet pepper, 1 tsp.

  • Wholegrain or gluten-free bread, 2 slices

 


Instructions:

In a large pot, melt oil over medium heat.

Add chopped onion and minced garlic. Sauté until softened.

Add sweet potato cubes to the pot, stirring for a couple of minutes.

Pour in the broth and bring the mixture to a boil. Reduce heat and let it simmer for 20 minutes or until sweet potatoes are tender.

Use an immersion blender to puree the soup until smooth.

Stir in tahini, salt, black pepper, and sweet pepper. Adjust seasoning to taste.

Serve with toasted bread.
