Ingredients:
Wholegrain Bread, 1 slice
Lettuce or any salad leaves, 1 handful
Halloumi, 60g
Avocado, 1 medium
Garlic, 1 clove
Juice of 1/2 lemon
Olive oil, 1 tsp
Honey, 1 tsp
Apple cider vinegar, 1 tbsp
Mustard, 1 tsp
Tomato, 1 medium
Fresh chives, 1 handful
Fresh basil, 1 handful
Pumpkin seeds, 1 tbsp

Instructions:
Grill halloumi slices until golden brown.
Mix olive oil, honey, lemon juice, apple cider vinegar, minced garlic, and mustard in a small jar.
Assemble salad with bread, salad leaves, grilled halloumi, sliced avocado, chopped tomato, chives, basil, and pumpkin seeds.
Drizzle with prepared dressing.
