Grilled Halloumi Salad
Grilled Halloumi Salad

Ingredients:

  • Wholegrain OR gluten-free bread, 2 slices

  • Lettuce or any salad leaves, 1 handful

  • Halloumi, 60g (halloumi is low in lactose)

  • Avocado, 1 medium

  • Garlic, 1 clove

  • Juice of 1/2 lemon

  • Olive oil, 1 tsp

  • Honey, 1 tsp

  • Apple cider vinegar, 1 tbsp

  • Mustard, 1 tsp

  • Tomato, 1 medium

  • Fresh chives, 1 handful

  • Fresh basil, 1 handful

  • Pumpkin seeds, 1 tbsp

 


Instructions:

Grill halloumi slices until golden brown.

Mix olive oil, honey, lemon juice, apple cider vinegar, minced garlic, and mustard in a small jar.

Assemble salad with bread, salad leaves, grilled halloumi, sliced avocado, chopped tomato, chives, basil, and pumpkin seeds.

Drizzle with prepared dressing.
