Grilled Sweet Potato Lunchbox

Ingredients:

  • Sweet potato, 1 large  (250 g)

  • Cherry tomatoes, 1 handful 

  • Romaine lettuce, 1/2 handful 

  • Arugula, 1/2 handful 

  • Cooked chickpeas, 100 g 

  • Clarified butter or coconut oil, 1 teaspoon 

 

Garlic sauce: 

  • (Lactose-free) yogurt Or plant-based yoghurt, 3 tablespoons

    OR 10 cashews blended with 5 tablespoons of water 

  • Lemon juice, 1 tablespoon 

  • Garlic, 1-2 cloves 


 

Instructions: 

Wash and dry the lettuce and tomatoes. Tear the lettuce into smaller pieces and place them in a container. Add the tomatoes on top. Wash the sweet potatoes and peel them. Slice them into pieces about 1 cm thick and grill them in a pan / bake / air fry or steam. Let the sweet potato cool, then place it on the tomatoes and sprinkle with chickpeas. Season with salt and pepper. Drizzle with garlic sauce just before serving.
