Ingredients:
Sweet potato, 1 large (250 g)
Cherry tomatoes, 1 handfulÂ
Romaine lettuce, 1/2 handfulÂ
Arugula, 1/2 handfulÂ
Cooked chickpeas, 100 gÂ
Clarified butter or coconut oil, 1 teaspoonÂ

Garlic sauce:Â
Yogurt, 3 tablespoons OR 10 cashews blended with 5 tablespoons of waterÂ
Lemon juice, 1 tablespoonÂ
Garlic, 1-2 clovesÂ

Instructions:Â
Wash and dry the lettuce and tomatoes. Tear the lettuce into smaller pieces and place them in a container. Add the tomatoes on top. Wash the sweet potatoes and peel them. Slice them into pieces about 1 cm thick and grill them in a pan / bake / air fry or steam. Let the sweet potato cool, then place it on the tomatoes and sprinkle with chickpeas. Season with salt and pepper. Drizzle with garlic sauce just before serving.
