Hangover Noodles
Hangover Noodles

Ingredients:

  • Ginger, 3 cm piece

  • Garlic, 1 clove

  • Low-salt soy sauce, 1 tbsp.

  • Rice wine vinegar, 2 bts.

  • Sesame oil, 1 tbsp.

  • Lemon juice of 1/2 lemon

  • Chinese cabbage, 1/2 handful

  • Broccoli florets, 1/2 handful

  • Snow pea, 1/2 handful

  • Wholegrain pasta OR Brown rice pasta, 60 g (rice pasta is naturally gluten-free)

  • Organic eggs, 2

 

Instructions:

 Grate ginger and garlic into a bowl. Mix with soy sauce, vinegar, sesame oil, lemon juice, and black pepper for dressing.

Cook pasta.

Boil cabbage, and broccoli for 3 minutes, adding snow peas for the last minute. Drain.

In a bowl mix veggies, pasta, and dressing.

Poach eggs*** or optionally hard boil them.

Serve noodles in bowls, topped with a boiled egg.
