Hangover Noodles
Ingredients:

Ginger, 3 cm piece
Garlic, 1 clove
Low-salt soy sauce, 1 tbsp.
Rice wine vinegar, 2 bts.
Sesame oil, 1 tbsp.
Lemon juice of 1/2 lemon
Chinese cabbage, 1 handful
Broccoli florets, 1 handful
Snow pea, 1 handful
Whole grain pasta OR Brown rice pasta, 50 g
Organic eggs, 2

Instructions:

Grate ginger and garlic into a bowl. Mix with soy sauce, vinegar, sesame oil, lemon juice, and black pepper for dressing.
Cook pasta.
Boil cabbage, and broccoli for 3 minutes, adding snow peas for the last minute. Drain.
In a bowl mix veggies, pasta, and dressing.
Poach eggs*** or optionally hard boil them.
Serve noodles in bowls, topped with a boiled egg.
