Leftover Roasted Chicken Dinner Toast

This recipe is a great way to use up leftovers from the previous night. Simply swap in any lean meat and roasted root vegetables you have in the fridge, and you'll have a complete meal on the go.


Ingredients:

  • Wholegrain or gluten-free bread, 2 slices

  • Butter OR olive oil, 1 tbsp OR small avocado, 1/2

  • Roasted chicken / chicken strips or other lean meat, shredded, 150 g

  • Arugula, 1/2 handful

  • Roasted pumpkin (squash) or other veggie (beetroot /eggplant/ jar roasted red pepper), mashed, 100 g

  • (Pine nuts, 1 tbsp.)


Instructions:

Start by toasting the bread.Spread butter, oil, or avocado on one slice of bread, and mashed pumpkin on the other slice. Top the pumpkin with chicken and rocket, then place the buttered slice of bread on top to form a sandwich. You can warm the sandwich in the oven if desired before serving.
