Lemon Basil Mediterranean Pasta
Ingredients:
Coconut oil, 1 tbsp.
Tomato passata, 200 ml
Garlic, 1 clove
Onion, 1
Red bell pepper, 1/2
Black olives, 2 tbsp.
Cherry tomatoes, 6
Whole grain pasta, 60 g
Zest of one lemon
Basil leaves, 1 handful

Instructions:
Cook the whole grain pasta according to package instructions. Drain and set aside.
In a pan, heat coconut oil over medium heat. Add chopped garlic, diced onion,
and sliced red bell pepper. Sauté until the vegetables are softened.
Stir in tomato passata, black olives, and cherry tomatoes. Simmer for about 5 minutes or until the cherry tomatoes begin to soften.
Add the cooked whole grain pasta to the sauce, tossing to coat evenly.
Finish the dish by sprinkling lemon zest and tearing the basil leaves over the pasta.
