Local baby aubergines, 6
Local baby zucchini, 8
Local zucchini flowers, 8
Pomegranate seeds, 4 tbsp.
Pomegranate sauce, 1-2 tbsp.
Olive oil, 2 tbsp.
Coriander, 1 handful
Walnuts, 50 g

Instructions:
Preheat your oven to 150°C.
Halve the baby eggplants and baby zucchinis lengthwise. Place them on a baking sheet, cut side up.
Bake in the preheated oven for 20 minutes until tender and slightly golden.
In the last 1-2 minutes of baking, add the zucchini flowers to the baking sheet.
Roughly chop the coriander and set aside.
Crush the walnuts in a mortar.
Once the vegetables are done, arrange them on a serving platter.
Sprinkle the crushed walnuts and pomegranate seeds over the baked vegetables.
Drizzle 1-2 tablespoons of pomegranate sauce and 2 tablespoons of olive oil over
the top.
Garnish with the chopped coriander.
