Ingredients:
Millet, uncooked, 100 g
Nectarine, 1 medium
Coconut milk light, 125 ml = 1/2 carton
Flaxseed, freshly ground OR any dried fruit, 1 tbsp.
(Mint leaves, a few)
Instructions:
Cook the millet and let it cool down. Blend half of the nectarine with the coconut milk until smooth, then pour the mixture over the cooled millet. Slice the remaining half of the nectarine and arrange it on top of the millet. Grind the flaxseed and sprinkle it over the dish. Garnish with a few mint leaves and serve.
