
Ingredients:
Wholegrain or gluten-free bread, 2 slices (80-100 g)
Cod, 150 g OR white fish in brine
Avocado, 1/2 small
Arugula, 1 handful
Pumpkin, 1 handful
Olives or capers, 1 tbsp.
Olive oil, 1 tbsp.
Lemon juice, 1 tbsp.
(Garlic, 1 clove)
Instructions:
Toast bread until golden.
Cook cod: steam 6-8 min OR bake at 180°C (350°F) for 12-15 min with olive oil, salt, and pepper, OR drain and flake canned fish.
Mash or slice avocado. Spread on toast, top with cod, season.
For salad, grate or steam pumpkin, mix with arugula, olives/ capers, olive oil, and lemon juice. Serve with sandwich.
