Ingredients:

  • Couscous or quinoa, 60 g

  • Zucchini, 1 medium, sliced

  • Wild white fish, 150-200 g

  • Onion, 1/2 medium, thinly sliced

  • Fish seasoning

  • Fresh or dried dill and mint

  • Fish sauce and /or lemon juice, 1 tbsp. each

  • (Chili-infused) olive oil

  • Salt and pepper to taste


 

Instructions:

Cook 60 g of couscous or quinoa and set aside.

Place fish on baking paper, season with fish seasoning, dill, mint, olive oil, fish sauce, and lemon juice. Top with thinly sliced onion, wrap the paper into a packet, and bake at 180°C for 15 minutes.

Grill or bake zucchini slices for 5-10 minutes.

Serve the grains with the baked fish and zucchini, seasoning to taste.
