Quinoa, Grape & Almond Salad
Quinoa, Grape & Almond Salad

Ingredients:

  • White quinoa, 70 g

  • Sesame seeds, 1 tbsp.

  • Mangetout (snow peas), 1 handful

  • Seedless grapes, halved, 1/2 cup

  • Little gem lettuce OR spinach, 1/2 handful

  • Chives OR any fresh herbs, 2 tbsp.

  • Unroasted almonds, halved lengthways or chopped, 10

  • Lemon juice, 1 tbsp.

  • Tamari, 1 tbsp.

  • Sesame oil/ grapeseed oil OR olive oil, 1 tbsp.


Instructions:

Cook the quinoa according to the package instructions. Briefly blanch the mangetout in a saucepan of boiling water for 30 seconds, then drain and set aside. In a large bowl, combine the cooked quinoa, mangetout, halved grapes, little gem lettuce or spinach, and chopped almonds. Add the chopped chives or other fresh herbs. Drizzle with lemon juice, tamari, and your choice of sesame oil, grapeseed oil, or olive oil. Toss everything together, then sprinkle with toasted sesame seeds before serving.
