Seabass & Lemon Chickpeas


Ingredients:

  • Seabass / any white fish, 150 g OR smoked tofu, 100 g

  • Rice (brown, red or black), uncooked, 60 g (rice is naturally gluten-free)


    Sautéed veggies:

  • Spinach, 2 handfuls

  • (Yellow) Cherry tomatoes

  • Chickpeas, 1/2 can

  • Garlic, 1-2 cloves

  • Salt and pepper

  • Juice of 1/2 lemon

  • (Grated lemon zest)

  • Olive oil, 1 tbsp.



Instructions:

Begin by cooking the rice according to package instructions. While the rice is cooking, prepare the fish by either baking or steaming it until it’s tender and flaky. In a large pan, heat olive oil and sauté minced garlic until fragrant. Add spinach, cherry tomatoes, and chickpeas, cooking until the spinach wilts and the tomatoes soften. Season with salt, pepper, and lemon juice, adding lemon zest if desired.
