Mozzarella Delight with Fig Elegance
Ingredients:
1 cup arugula
100 g mozzarella
1 egg
2 fresh figs OR 8 green grapes
5 basil leaves
5 mint leaves
1 tablespoon lemon juice
1 tablespoon olive oil
2 tablespoons walnuts
Instructions:
Prepare the Salad:
In a non-sticky frying pan or grill pan, fry one sliced fig for about 3 minutes.
In a large bowl, combine the arugula, chopped walnuts, sliced grilled fig, a hard-boiled egg, and torn mozzarella.
Prepare the Dressing:
In a blender or food processor, combine one fig, olive oil, lemon juice, mint, and basil leaves.
Blend until the dressing reaches a smooth consistency.
Drizzle the fig-basil dressing over the salad.
Serve with a slice of wholegrain or gluten-free bread. Enjoy!
