
Ingredients for TWO SERVES:
Oats, 50 g (oats are naturally low in gluten)
Large egg whites, 6 OR large eggs, 4
Protein Powder, 30 g, unsweetened whey protein OR unsweetened vegan protein powder
Small bananas, 2
Cinnamon, 1 pinch
Coconut oil for frying, 1 tsp.
(Lactose-free) yoghurt OR vegan Greek yogurt, 120 g
Unsweetened peanut butter, 2 tbsp.
Walnuts, 6, chopped
Serve with:
Favorite berries, 1/2 cup
Unsweetened peanut OR almond butter, 1 tbsp.
Maple syrup, 1 tbsp.
Instructions:
Put the oats, egg whites, protein powder, 1 banana and the cinnamon in a blender and mix to a smooth batter.
Heat the oil in a non-stick frying pan over medium heat and pour 1/4 cup batter into the pan. When large bubbles form on the surface of the pancake after about 3 minutes, flip the pancake over and cook until light golden on the other side. Cook the rest of the batter.
Slice the remaining banana. Serve the pancakes with sliced banana, yogurt, nut butter and walnuts.
