Carmelized Onion White Bean Dip
Ingredients:

White onion, 3, thinly sliced
Garlic, 2-3 cloves, minced
Lemon juice, 3 tbsp.
White beans, 1 can, drained and rinsed
Coconut oil, 1 tbsp.
Olive oil, 3 tbsp.
Ground corriander, 1 tsp.
Salt and pepper to taste

Instructions:
Heat coconut oil in a pan over medium-low heat. Add thinly sliced white onions and cook, stirring occasionally, for 30-40 minutes or until the onions are golden brown and caramelized.
Add minced garlic to the pan and sauté for an additional 2-3 minutes until fragrant.
In a blender or food processor, combine the caramelized onions and garlic with drained white beans, lemon juice, olive oil, ground coriander, salt, and pepper.
Blend until the mixture is smooth and creamy. If needed, add more olive oil or lemon juice to reach your desired consistency.
