Gluten-Free Millet Tabbouleh Lunch-Box

Ingredients:
Millet, uncooked, 100 g
Onion, 1/2
Turmeric, a pinch
Cherry tomatoes / fresh cucumber / seasonal vegetables, 1 handful
Fresh parsley, 1/2 handful
Green onions, 1/2 handful
(Mint, chopped or in seasoning), 1 tablespoon
Olive oil, 2 tablespoons
Lemon juice, 2 tablespoons
Salt and pepper to taste
Seeds, 1-2 tablespoons (e.g., black cumin, black sesame, sunflower seeds, pumpkin seeds), toasted or ground
Instructions:
Cook the millet. Sauté the finely chopped onion in a pan. Add the millet shortly after, then add turmeric, salt, and pepper. Transfer the millet to a bowl, add the vegetables, lemon juice, and olive oil. Garnish with seeds.
