
TIP:
The night before, soak the pumpkin seeds in water.
Ingredients:
Pumpkin seeds, 120 g
Dried tomatoes, 100 g
Garlic cloves, 2-4
Hulled hemp seeds, 2 tbsp
Basil, 1 bunch OR 2 handfuls of spinach OR a mix of both
Black OR green olives (pitted), 6-8
Unsweetened soy drink, 4 tbsp
Tomato paste, 2 tbsp
Dried oregano, 1 tsp
Instructions:
The night before, soak the pumpkin seeds in water. If using dry sun-dried tomatoes, soak them separately in water overnight. If using sun-dried tomatoes from an olive brine, simply pat them dry with paper towels.
The next day, peel the garlic. Wash and dry the basil/spinach. Drain and rinse the soaked seeds and tomatoes.
Add all ingredients to a blender and puree into a creamy dip. Serve with whole-grain or gluten-free bread. Stores in the fridge for about one week.
