Ingredients:
Millet, uncooked, 70 g
Avocado, 1/2
Egg, large, 1
Radishes, 3
Sprouts, 2 tbsp. OR fresh herbs, e.g. coriander
Olive oil, 1 tbsp.
Coconut oil, 1 tsp.
Lemon juice, 1-2 tbsp.
Flaxseed, freshly ground, 1 tbsp. OR favorite unroasted nuts and seeds
Salt and pepper, to taste
Optional: a handful of fresh herbs, e.g. basil, arugula, mint

Instructions:
Cook millet according to package instructions.
Slice avocado and radishes.
Heat coconut oil in a pan and cook the egg sunny-side up. The egg yolk should still be runny.
Assemble the bowl: add millet, avocado, radishes, and sprouts.
Top with the egg, drizzle with olive oil, lemon juice, and sprinkle flaxseed, salt, and pepper.
