
Prawn & Smoked Salmon Bowl
Ingredients:
Mixed salad leaves (e.g. with carrot), 1 big handful
Cherry tomatoes (yellow/red) 6-8
Cucumber, 5 cm
Olive oil, 1 tbsp.
Lemon juice, 1 tbsp.
Smoked salmon, 75 g
Cooked prawns, 6
Couscous / millet, 70 g (millet is naturally gluten-free)
Instructions:
Toss salad leaves, halved cherry tomatoes, and sliced cucumber in a bowl. Drizzle with olive oil and lemon juice. Prepare couscous by stirring it into hot vegetable broth, covering for 5-7 minutes, then fluffing with a fork (optional: add smoked pepper and chili). Arrange smoked salmon, cooked prawns, and couscous on top. Serve immediately.
