Spiced Buckwheat & Crunchy Nut Granola

Ingredients:
Buckwheat grains, raw / uncooked, 100 g
Walnuts, 50 g, chopped
Almonds, 50 g, chopped
Pumpkin seeds, 50 g
Flaxseeds, 30 g, freshly ground
Desiccated coconut, 30 g
Ground cinnamon, 2 tsp.
Ground cardamom, 2 tsp.
Instructions:
Chop the walnuts and almonds. Grind the flaxseeds. Mix all the ingredients in a bowl and transfer them into a jar. Voilà!
Optional: Soak the buckwheat grains for 30 minutes. Drain and mix with the other ingredients. Add 3 tablespoons of coconut oil and bake for 20 minutes at 170 degrees Celsius, stirring halfway through.
Serving size: 3 tbsp.
Serve with:
(Lactose-free) yogurt OR plant-based yogurt, 1 small cup
Favorite berries, 1 handful
Unsweetened and unsalted nut butter, 1 tbsp. (hazelnut, almond, cashew, peanut, tahini, etc)
