Tofu Scramble


Ingredients:


  • Coconut oil, 1 tbsp.

  • Multigrain bread, 1 slice

  • FIRM tofu, 150 g NOT silken tofu

  • Onion, 1/2

  • Garlic, 1 clove

  • Seasoning: cumin, mustard, turmeric, nutritional yeast

  • Water / Vegan Milk, 3 tbsp.

 

Instructions:


Combine 2-3 tablespoons of water, nutritional yeast, mustard, garlic, turmeric, cumin, and a pinch of salt in a small bowl, whisking until well blended.

In a large frying pan over medium heat, warm coconut oil. Add chopped onion and cook until softened. Mash tofu with a fork and add it to the pan, stirring until warmed through, approximately 3 to 5 minutes.

Reduce heat to low and incorporate the spice mixture into the tofu, cooking for an additional 3 minutes while stirring occasionally.
