Zucchini Overnight Oats
Ingredients:

Zucchini, 1 cup, grated
Rolled oats, 1 cup
Cinnamon, 1 tsp.
Unsweetened almond milk, 1.5 cup
Raisins 1 heaped tbsp. OR honey, 1 tbsp.
Pomegranate seeds, 3 tbsp. (for topping)
Unroasted hazelnuts, 3 tbsp. (for topping)

In a mixing bowl, combine grated zucchini, rolled oats, cinnamon, and unsweetened almond milk.
If you prefer a sweeter flavor, add 1 tbsp. of honey to the mixture. Alternatively, you can use 1 heaped tbsp. of raisins for natural sweetness.
Stir the ingredients well until everything is evenly combined.
Cover the bowl with a lid or plastic wrap and refrigerate the mixture overnight to allow the oats to absorb the liquid and flavors.
The next morning, give the mixture a good stir. If it seems too thick, you can add a splash of almond milk to achieve your desired consistency.
Divide the zucchini overnight oats into three serving bowls.
Top each bowl with 1 tbsp. of pomegranate seeds and 1 tbsp. unroasted hazelnuts for a burst of freshness and crunch.

Overnight oats keep well in the fridge for at least four days.
For more protein, add unsweetened and unsalted peanut or almond butter.
The overnight oats can be reheated.Â
