
Ingredients:
Wholegrain or gluten-free bread, 100 g
Mixed beans, drained and rinsed,150 g
Walnuts, chopped, 2 tbsp.
Olive oil, 1 tbsp.
Lemon juice, 1 tbsp.
Beetroot, 1 medium, grated
Cucumber, 5 cm, grated
Green bell pepper, 1/4 – 1/2
Fresh dill / fresh parsley or both, 2-3 tbsp.
Instructions:
Mix drained beans, grated beetroot, grated cucumber, chopped green bell pepper, and herbs. Add olive oil, lemon juice, and chopped walnuts. Toss well and serve with wholegrain or gluten-free bread. You can toast the bread.
