Butter-Braised Leeks

Ingredients:
Leeks (white and light-green parts in 2-cm segments), 3 to 4 large
Ghee butter or olive oil, 2 tbsp
Vegetable or chicken broth, 1 cup
Garlic (smashed), 2 cloves
Fresh thyme or rosemary, a few sprigs
Salt and black pepper, to taste
Optional: Fresh lemon juice or Parmesan cheese, for finishing
Instructions:
1. Slice the leeks, submerge them in cold water to remove grit, and pat thoroughly dry.
2. Melt butter over medium-high heat, cook leeks flat-side down for 3–4 minutes until deep golden, then flip.
3. Lower heat to medium-low, add garlic, thyme, broth, salt, and pepper, then cover and simmer until fork-tender (15–20 minutes).
4. Uncover, increase heat slightly to reduce the liquid into a glossy sauce, and finish with lemon juice or cheese if desired.
Pair leeks with a pan-seared chicken breast or roasted white fish.
