Creamy Radish and Dill Sunflower Seed Spread

Ingredients:
Sunflower seeds, 200 g (soaked for at least 5 hours or overnight, then drained)
Radishes, 5 (grated)
Fresh dill OR chives, 1 bunch (chopped)
Lemon juice, from 1/2 a lemon
Salt, to taste
Black pepper, to taste
Olive oil, 1-4 tbsp (optional, for extra smoothness)
Instructions:
Soak the seeds: Place the sunflower seeds in a bowl, cover them with water, and let them soak for at least 5 hours or overnight. Once soaked, pour out the water and rinse them well.
First blend: Transfer the drained sunflower seeds to a blender or food processor. Add the lemon juice, salt, black pepper, and olive oil (if using). Blend until the mixture becomes relatively smooth and creamy.
Add the vegetables: Add the grated radishes and chopped dill or chives to the blender.
Final blend: Blend the mixture one more time until everything is well combined and reaches your desired texture. Enjoy it as a spread on seed bread, a dip for crackers, or a filling for wraps!
