Ingredients:
Beetroot, precooked, 1 medium
Parsimmon, 1/2 medium OR orange, 1/2 medium
Macadamia nuts, 1 tbsp
Basil or rucola leaves, 1 handful
Olive oil, 1 tbsp.
Aceto Balsamico, 1 tbsp.
Wholegrain or gluten-free bread, 2 slices
Instructions:
To prepare, slice precooked beetroot or bake one at 180°C for an hour, then peel and slice.
Segment half a parsimmon or an orange and crumble macadamia nuts.
Mix olive oil and balsamic vinegar for the dressing, then toss with beetroot, orange, and nuts.
Add fresh basil or rucola leaves, and serve with wholegrain or gluten-free bread.
