Cauliflower Salad

Ingredients:
Salad leaves (spinach, rucola, watercress, Romaine lettuce), 2 handfuls
Raw cauliflower, 6 florets
Dill, 1 handful
Chives, 1 handful
Horseradish, 2 tsp.
Onion, 1 small
Salt and pepper
Peeled almonds, 20
Water, 1/2 glass
Juice of 1/2 lemon
Instructions:
Blend almonds with water and lemon juice to make a cream, then stir in horseradish.
Grate raw cauliflower florets.
Mix salad leaves, grated cauliflower, chopped dill, chives, and onion.
Season with salt and pepper.
Serve with horseradish almond cream.
Serve with:
Steamed white fish, 200 g OR firm tofu, 150 g
Wholegrain rice, 60 OR wholegrain / gluten-free bread, 2 slices
Olive oil, 1 tbsp.
