Refreshing Fruit & Mint Salad

Ingredients:
Green leaf lettuce, 2 handfuls
Peppermint leaves, fresh, 2-4 tbsp.
Cucumber, 1 small
Kiwis, 2 OR blueberries, 1 handful OR raspberries, 1 handful OR orange, 1 big
Pecan nuts, chopped, 2 tbsp
Olive oil, 1 tbsp
Instructions:
Wash and thoroughly dry the green leaf lettuce. Tear it into bite-sized pieces and place them in a salad bowl.
Slice the cucumber into thin rounds or half-moons. Prepare your choice of fruit:
If using kiwis: Peel and slice or dice them.
If using an orange: Peel, segment, and roughly chop.
If using berries (blueberries or raspberries): Gently wash and pat them dry.
Toss the cucumber, your chosen fruit, and the fresh peppermint leaves into the bowl with the lettuce.
Drizzle the olive oil evenly over the salad. Toss gently to coat, then top with the chopped pecan nuts for a satisfying, buttery crunch.
