Ingredients:
Wholegrain or gluten-free wrap, 1
Pesto, 1 tsp.
(Free-range) roasted chicken, 120-150 g
Avocado, 1/2
Cherry tomatoes, 1 handful
Coriander OR other herbs, 1 handful, finely chopped
(Pepper-infused) olive oil, 1 tsp.
Instructions:
Use roasted chicken but remove the skin. Shred or slice the meat into small pieces.
In a bowl, combine the chicken, olive oil, chopped herbs, cherry tomatoes, and diced avocado. Toss gently to mix.
Heat the wholegrain or gluten-free wrap briefly in a pan or microwave until warm.
Spread 1 teaspoon of pesto across the center of the wrap and fold it. Serve the wrap as a side.
