3 Ingredient Banana Oat Pancakes


Ingredients:


  • Bananas, 2 medium (240g peeled or 1 cup mashed)

  • Eggs, 2 medium

  • Rolled oats, 1 cup (100g)


Optional (choose 1 or all 3):

  • Whole fat ricotta, 1/2 cup (120g)

  • Cinnamon, 1 teaspoon

  • Hemp seeds / Flax seeds: 1 tablespoon


Instructions:


Blend all ingredients (except hemp seeds) until smooth. Stir in hemp seeds. Let batter sit for 5 minutes.

Heat oil/butter in a pan over medium heat. Drop 1-2 spoonfuls of batter into the pan.

Cook for 1-2 minutes until golden brown and bubbles form at the edges. Flip and cook for another 1-2 minutes.


Notes:


Feel free to add other options like grated carrots or chopped fruits.

Refrigerate for 3-4 days or freeze for up to 3 months.
