Chia Pudding with Beetroot Powder

Ingredients:

  • (Plant) milk, 200 ml

  • Chia seeds, 3 tbsp. 

  • Maple syrup OR honey, 1 tsp. 

  • Greek yogurt, 3 tbsp. 

  • Beetroot powder, 1 1/2 tsp. 

  • Fresh berries, 1/2 cup 

  • (Lemon zest, mint leaves)



Instructions:

Mix plant-based milk, chia seeds, sweetener, and beetroot powder. Stir well.

Refrigerate for 2 hours or overnight.

Layer chia pudding and Greek yogurt in bowls or glasses.

Top with fresh berries, and garnish with lemon zest and mint leaves if desired.
