Ingredients:
Flaxseeds (ground), 250 g
Eggs, 6
Sunflower seeds (whole), 70 g
Psyllium husk, 3 tbsp
Baking powder, 2 - 2.5 tsp
Warm water, about 210 - 280 ml (add gradually until you get the right consistency)
Salt, a pinch (optional)
Instructions:
In a large bowl, thoroughly mix the ground flaxseeds, psyllium husk, baking powder, salt, and sunflower seeds.
Add the eggs and a portion of the water.
Start mixing the ingredients. Add the remaining water gradually — the mixture should be thick, but pliable enough to shape or transfer into a baking tin.
Let the mixture sit for 10–15 minutes. During this time, the psyllium husk will swell and bind all the moisture, which keeps the bread from crumbling.
Transfer the mixture into a loaf tin lined with baking paper. Bake at 180°C for about 45–55 minutes, or until a toothpick inserted into the center comes out clean.
Remove the bread from the tin and let it cool completely on a wire rack before slicing.
