Smashed Peas with Mint Bread Spread
Smashed Peas with Mint Bread Spread


Ingredients:

  • Frozen green peas, 450 g

  • Water, 1/2 cup

  • Olive oil, 1 tbsp. OR garlic-infused oil

  • Fresh or dried mint, 1-2 tbsp. OR a mix of both

  • Salt to taste

  • (Garlic, 1-2 cloves)

  • (Miso paste, 1 tbsp.)


Instructions:

In a saucepan, combine the frozen green peas and 1/2 cup of water. Bring to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the peas are tender.

Add olive oil, mint, and salt to taste. For extra flavor, include garlic and miso, if desired.

Blend until smooth, adjusting the consistency with a little water or olive oil if necessary.

Taste and adjust seasoning. Serve fresh on bread, crackers, or as a dip.
